SVOURA TINOS! If you are sitting on the pedestrian street in Koukaki for a coffee or a snack, planning your summer vacation, just turn Svoura (= spinning top in greek) and you will be “transported” from Athens to Komi of Tinos. Somehow, the same group of friends found themselves in the picturesque village square in 2018, were charmed and gave it life again, after many years. With love and authenticity, they created a place tied to the village, unpretentious, for groups of friends to grow and distances to shorten. A place to share food, moments and smiles. Since then, Svoura has not stopped spinning around the old plane tree and gathering friends who are having a good time around it…
Sharing is also the basic philosophy of the menu. Dishes with Cycladic character to be shared. They mostly combine vegetables selected from the neighboring plain of Komi, local meat and fish “whatever the current catch brings”. Fresh raw materials, seasonality and tradition form the basis of the cuisine that focuses on Tinian – island flavors with some creative touches intended not to impress but to highlight the quality raw materials. Old forgotten recipes (Fresh garlic lasagna with artichoke from Milos, Fried beans from Donoussa, Unsalted cod from Santorini), also dishes that have become established over the years and define Svoura (Savory “loukoumades” with Evian Athouri cheese and sesame, Zucchini chips with beetroot tzatziki that stole hearts from the first day of Svoura’s operation) and 4-5 daily dishes depending on what good was found at the local market (Smoked goat with vine leaves and roasted tomato, Cold “Monday” deboned lamb, Scorpion giouvetsi, Fresh fish whole or filleted on the grill, Grouper with fried okra, Beef fillet with parsley salad and pickled zucchini, etc.). Accompany them with Aegean wines untill the sweet ending that includes handmade chamomile parfait ice cream and pollen panna cotta among others.
If you want a simple and traditional breakfast, Svoura awaits you from the morning (09:00 – 11:30) for a delicious start of your day, while the kitchen remains open from 13:00 – 23:30. During the busy summer months, make your reservation, for which you will only need your first name (as we said, everyone here is a friend).
