Holy Tuesday: Cheese Pies
On Holy Tuesday, housewives prepare the Easter sweet of Tinos- cheese pies.
The pies are made from a local kind of unsalted cheese, eggs, sugar and orange or vanilla.
The filling is rolled into a sheet, which is given the “tsimpito” festive shape by using a toothpick.
Housewives used to go from house to house and help the hostess with the preparation, since making this special sweet was a fairly complicated and time- consuming process.
